We are a sake brewery based in Nishinomiya, Japan. For us, sake is joy: it connects person to person and humans to nature.
All of Sakari drinks are naturally vegetarian, gluten-free and preservatives-free.
Sake is an alcoholic beverage from Japan, made from rice, with an alcohol content around 15%.
There is no sake without respect for nature.
Sake is born out of simple and natural ingredients: water and rice. Next comes koji, that converts starch into glucose, allowing yeast to start fermentation, thus creating the product we love.
Koji and yeast are protagonists here: our role is to make their job easier.
We inherited our techniques from the Tamba Master Brewers.

In the millenary world of sake, Sakari is a barely 130-years-old startup. Its young founders wanted to build the future of Japanese society through sake, with study and collaboration. The same spirit still moves us today. Sakari’s five founders are now remembered in our logo: five sake glasses that, meeting in a toast, create a Sakura flower.
Since 1913 we are official suppliers of the Imperial Household.
It’s hard to think of a better place than Nishinomiya to brew our sake. Situated in the Hyōgo prefecture, our land is blessed with the perfect rice and water.

We use miyamizu, subsoil water from the Rokko mountain that springs out in Nishinomiya. Its mineral content makes it a key ingredient for superior, clean and crisp sake.
Our local rice is called Yamada Nishiki and it’s also known as “the king of sake rice”. It has a large grain and ideal characteristics for sake brewing.
Koji is the mold that allows the conversion of starch into glucose, a necessary precondition for fermentation. At the same time, during this process, the enzymes inside koji produce the amino acids of sake.
We use different kinds (more than 600) of yeast in order to create the unmistakable aromas of our sakes. For most of our sake we use our original yeast, that exists only inside the Sakari brewery.

Depending on the kind of rice, koji, yeast, on the temperature and on how much you polish the rice grain you will get completely different types of sake, with different flavor profiles.
Some are fruity, some are dry. Some are best enjoyed hot, some cold. Every food and every moment have their right sake.

Junmai Daiginjo Sake
Sometimes more can be achieved with less. It seems to be the case with Sakari no. 11: by polishing off half of the rice grain, the true and rich taste of rice can come through.
